A pita is the round, flat and soft bread typical of Greek cuisine and many other countries of the Middle East, perfect to be enjoyed with tasty and aromatic sauces.
In fact, pita is used to accompany many dishes such as hummus and is always served together with gyros, a typical Hellenic meat dish.
It will also be perfect in combination with a tasty dish such as lamb, for a dinner worthy of the best Greek taverns!

Ingredients:
50 gr of Coconut Flour (my favourite is this)
4 gr of Psyllium seeds
pinch of salt
8 tablespoons of Coconut oil
1/8 tablespoon of baking powder
270 ml of water, boiling
Instructions
- In a bowl, mix all the dry ingredients (Coconut Flour, Psyllium seeds, salt, and baking powder)
- Add the boiling water and Coconut oil and mix well.
- Separate the dough according to the number of portions (4 in this case) provided and flatten each piece of dough to form a pita bread with a thickness of a few millimetres).
- Heat a skillet over medium-high heat.
- Cook it dry, one piece at a time, 5-10 minutes per side, until golden brown.
- Serve hot or lukewarm.
Note:
The psyllium cuticles must be weighed before grinding them finely to obtain a good consistency bread.
If you use already ground psyllium, weigh it and make sure it is very fine.
