Those low-carbs banana muffins are a brilliant nutrient-dense treat that won’t make you feel bloated the way a wheat muffin does. Bananas contain the biggest amount of carbs among all fruits and a medium one contains about 10 calories (25 gr of total carbs and 3 gr of fibres) this is why people on low carbs diet generally avoid it. But here is the MAGIC! The entire recipe only got one banana and, as we distribute it among 8 muffins the carbohydrate content of each muffin is quite low. Just make sure the banana you use is ripe, the browner the better, as ripe bananas are full of flavour compared to the yellow ones.
These muffins freeze well, for up to 3 months. So, make a double batch and simply take one out the night before when you want it for breakfast.

Ingredients:
200 gr of Almond Flour
30 gr of Flaxseed
1 banana very ripe
2 large eggs
120 ml of Almond milk
60 ml of Coconut oil
3 tablespoons of Stevia
1 tablespoon of Baking powder
40 gr cacao nibs (85-90%)
1 tablespoon of cinnamon
1 tablespoon of mixed spice
Instructions
- Preheat the oven to 180 ºC
- Mix the banana, eggs, almond milk, and oil.
- Add the Almond flour, the flaxseeds, the Stevia, the baking powder and the spices.
- Stir in the cacao nibs
- Fill into a muffin tin lined with paper cups.
- Bake at 180ºC for 25-30’ or until brown.
