I spent with my family many summers in Parrutta, a hamlet of Trecchina, and their traditional Walnut Cake has always been a must that could not be missed.
So, I wanted to try to do it in a low carbs version.
I will not hide from you that I had to make it and redo it many times before approaching the original in taste and consistency but, luckily, none of my family has ever complained, quite the contrary.
Here it is, my “several-time” tried and tested recipe.

Ingredients:
- 260 gr of Walnuts
- 4 large eggs
- 6 tablespoons of Stevia
- 1 tablespoon of Baking powder
- 125 gr plain fat free yogurt
- powder sweetener to decorate
Instructions
- Preheat the oven to 180 ºC
- Chop the walnuts and keep them aside
- Blend the egg yolks with the stevia until a frothy mixture is obtained
- Separately, beat the egg whites until stiff
- Add the yogurt, the walnuts, the egg white and the baking powder.
- Pour into the pan
- Bake at 180ºC for 30’ or until brown.
